Counter space is scarce around the cabin and campsite kitchen, so we developed The Maple Raised Chopping Block to maximize usable surface. The legs stand the board above prep work, offer a place to stash knives, or keep the board off the ground next to the camp stove. We worked with Littledeer Tools, a Canadian wooden cookware maker whose provenance is in camping utensils, to produce our cutting board with highly-sustainable hard maple. To keep our chopping block light, packable, and sturdy the surface is long grain, not the thick end grain used on heavy butcher's blocks. The legs are affixed with sliding dovetail joints, cut with such precision that no glue is required - the natural compression of the wood keeps the joints tight. Special care is taken to polish the boards by hand, focusing on the edges to prevent the wood from warping due to changes in environment. The quiet craftsmanship of The Maple Raised Chopping Block makes it suitable for presenting dishes at the table once its work in the kitchen is done.

The Cutting Board, as well as all other wooden utensils, should never be washed in the dishwasher. Wash by hand with mild detergent, oil occasionally with mineral oil, or better yet, a mixture of oil and beeswax. As with our axe helves, it is recommended to oil a new board once a day for a week, once a week for a month, and once a month for a year to guarantee a properly sealed board. Oil if board begins to feel coarse.

The Cutting Board has a long grain surface, which is not impervious to knife cuts, especially with a properly-sharpened knife. The board will nonetheless last for many years with proper care. To sanitize the board after cutting meat, rub thoroughly with salt and the juice of half a lemon.
